We refer to it as a vegetable but it's really a fruit; the Tomato

Ingredients
- 8 Fresh Tomatoes
- 5 cloves of Garlic
- 1 medium sized Onion
- 1 Medium sized Green Sweet Pepper
- 2 Tablespoons of Fresh Basil (Finely chopped)
- 1 Tablespoon of Sugar (brown preferably)
- 1 1/2 Tablespoons of Oil
- 1/2 Teaspoon of Salt
- 1/4 Teaspoon of Black Pepper
Instructions
- Wash all Tomatoes and place 5 of them on a baking-sheet.
- Place the 5 cloves of Garlic on the same baking-sheet (not peeled)
- Use Oil and drizzle over the Tomatoes and Garlic. Put in oven to roast at 450 degrees (F) for 15-20 minutes (until skins pop).
- Remove garlic from baking-sheet, peel and place in a mixing bowl.
- Sprinkle Sugar and Basil on the Tomatoes remaining on the baking-sheet and put in oven for 5 minutes (until sugar melts).
- Remove from oven and add to mixing bowl with the garlic.
- Use a fork to mash ALL ingredients together, adding Salt and Black Pepper.
- On cutting-board, chop up the other 3 Tomatoes, Onion and Green Sweet Pepper. Add to mixing bowl and combine.
Prep Time: 5 minutes
Cooking Time: 25 minutes (max)
Total Time: 30 minutes
Servings: 2 cups (approximately)
